I loved the original Final Fantasy! It's one I've been meaning to replay.

I've seen most of those but it's been quite a while, except Cowboy Bebop which I rewatched recently. Catgirl Nuku Nuku was one of the earlier anime that I watched and would love to revisit it.

I primarily use DuoLingo but also use MemRise, both are smartphone apps or accessible via website.
