The "Z" after Dragon Ball was meant to be a "2" but some artist didn't understand that Akira Toriyama only had some problems with his hand writing 
Then to help it make sense, the author explained that the "Z" means that the warriors in the series attain such a power level that no one can go beyond it - the letter "Z" is the last one in the English alphabet and no one can add more letters after it.

I always thought the Z didn't stand for anything... Akira just put it there because he didn't intend on making another series after DragonballZ...
There's too many possible reasons... I think only Akira Toriyama knows the true answer and maybe his stalkers know it too...

Of course the Z is the last letter of the Alphabet, I had a feeling it was that reason.
