if Inuyasha and Kagome one day had a faimly (unexpected, yet possible) would Inuyasha's kids be like...1/4 demons?...hhmm, 1/4 demon, 3/4 annoying whiny school girl...

Technically, the child(ren) would be 1/4 demon and 3/4 human.
As far as the girls' personalities mimicing Kagome's and the boys' personalities mimicing Inu-Yasha's, that is the common like mother like daughter stereotype. If their child was a girl, she could easily mirror Inu-Yasha's personality more than Kagome's. In fact, that seems most logical (if the girl's personality was similar to Kagome's, it would be repetitive).
Of course, the child(ren) may have personalities of their very own, not similar to their parents.
The same goes for appearance. Children are not, in most cases, carbon copies of their parents. I look nothing like either of my parents. It's quite possible their children would be a blend between them or not look like them at all. Remember, both Inu-Yasha and Kagome have parents of their own with their own genes. Their children could look more like their grandparents.
Because people carry x and y genes, it is easy for a genetic trait to remain dormant in one person, but be dominant in the offspring. I'll use eye color as an example. Inu-Yasha has golden eyes. Inu-Papa had golden eyes. Izayoi had a dark (I'm assuming a very dark brown) eye color. Inu-Yasha is carrying the x gene (golden eyes) and the y gene (brown eyes). The x gene is dominant over the y. Thus, he has golden eyes and not brown.
Now look at Kagome. She has brown eyes. This means that a child of theirs could have brown eyes instead of golden. Let's look at probability. For the sake of making this easy, let's say that Kagome is not a carrier and has two y genes, thus she has brown eyes. With her yy genes and Inu-Yasha's xy genes (remember, despite having golden eyes, which is the x gene, he is also carrying the gene for brown eyes, the y gene) the possibility of one of their children having brown eyes is 50% Thus, there is an equal chance of having brown or golden eyes. It wouldn't surprise me if the children with the more demonic features (noticeable demon features) had golden eyes, (golden eyes are, afterall, a demonic trait, especially in dog demons)and the children with more human features had brown eyes. Of course, because genetics isn't as easy as that, a child with more demonic features could easily have brown eyes, just as a child with more human features could easily have golden eyes.
Thus, it's up to your own imagination to decide how the children would look. I've already given this a little thought, and personally I wouldn't mind a female child with more of Inu-Yasha's spunky, arrogant traits. But that's just my opinion.
