Naruto, Rurouni Kenshin are both good.

Ghost in the Shell is good... it's Cyber-punk and it's pretty heavy if you pay attention (The original movie is far better than SAC and Innocence), along those lines Akira is also good... for a series I would reccomend Carried by the Wind: Tsukikage Ran, it's short (12 episodes) but it has good humor and is done in the same style as Ruroni Kenshin, it's set in the Edo period of Japan, and it gives a far more realistic impression of the samurai than most series (The main character is a amurai who would seel out for good sake, and does on many occasions, and a bi-polar marital artist) It has a good ammount of humor too...
Hellsing is pretty good too... however it's definately NC-17 for blood, violence, gore, adult language, adult content, satanic themes, etc. (When the main protagonist is a psychotic vampire...)
High-Action show with some good character development, mostly centerd around ceras (Celes) Victoria, and it's got some of the better character concepts as well, there is a section on the boards about it so you might want to look into it... It also has some cryptic humor, and dispite its dark themes it's very entertaining.
